Healthy muffins

BREAKFAST

 

Ingredients:

  • 2½ cups all-purpose flour
  • 1 cup rolled oats
  • ½ cup agave
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp nutmeg
  • 3 large carrots (about 1 cup), shredded
  • 1 banana, mashed
  • 1 cup zucchini, shredded
  • 2 eggs
  • ⅔ cup milk
  • 1 cup raisins
  • 6 tbsp olive oil

Preparation

  1. Preheat oven to 375F degrees. Prepare a muffin pan with lined muffin cups.
  2. In a large bowl add the dry ingredients and combine.
  3. In a second bowl add the Naturalever Clear Agave Syrup, carrots, zucchini, bananas, oil and mix.
  4. In a third small bowl whisk the milk and eggs.
  5. Combine all the ingredients in a large bowl and mix until uniform. Add the raisins and fold.
  6. Using an ice cream scooper, fill the muffin cups to about ¾ full.
  7. Bake for about 25 mins. Let it cool for 10-15 minutes before serving

Grilled Chipotle Orange Chicken

DINNER

Ingredients:

  • 1 pound boneless chicken breast 
  • 3 coves garlic 
  • 1 tablespoon herbes de provence
  • 2 tablespoon of Naturalever Clear Agave Syrup
  • 1 teaspoon salt
  • 1 tablespoon chipotle chile powder
  • 1 cup orange juice

Preparation

  1. Rinse chicken breasts and pat dry with a paper towel.
  2. Place chicken in a 9 x 13 inch baking dish.
  3. Pour orange juice over chicken breasts.
  4. In a small bowl, combine garlic, herbes de provence, Naturalever Clear Agave Syrup, salt and chipotle, then rub mixture into chicken breasts.
  5. Marinate chicken in refrigerator, time permitting for up to 5 hours.
  6. Place chicken breasts on a plate, and reserve marinade.
  7. Grill each side of chicken on barbecue until chicken is cooked through.
  8. Cook marinade, bringing to a boil, then reduce heat and cook for 10-15 minutes.
  9. Serve chicken with marinade.

Margarita

BEVERAGES

Ingredients:

  • Salt
  • 2 lime slices
  • 1/4 cup Tequila Blanco
  • 1 tablespoon of Naturalever Amber Agave Syrup
  • 1/4 cup fresh lime juice

Preparation

  1. Pour some salt into a small dish.
  2. Rub 1 lime slice over half the rim of an Old Fashioned glass (if you prefer your Margarita on the rocks) or a coupe glass (if your prefer it up).
  3. Dim rim of glass into salt.
  4. Combine Tequila, Agave Syrup and juice in a cocktail shaker; fill with ice and shake well.
  5. Strain into prepared glass.
  6. Garnish with second lime slice.
  7. Enjoy!!! 

 

Homemade BBQ Sauce

DRESSINGS

Ingredients:

  • 15 oz. can of tomato sauce
  • 1/2 cup apple cider vinegar
  • 1/3 cup Naturalever Agave Syrup
  • 1/4 cup tomato paste
  • 1/4 cup molasses
  • 3 tsp. worcestershire
  • 2 tsp. liquid smoke
  • 1 tsp. smoked paprika
  • 1 tsp. garlic powder
  • 1/2 tsp. freshy-ground black pepper
  • 1/2 tsp. onion powder
  • 1/2 tsp. salt

Directions: 

  1. Whisk all ingredients together in a medium saucepan. 
  2. Bring to a simmer over medium-high heat.
  3. Reduce heat to medium low and simmer (uncovered) for 20 minutes.
  4. Use the sauce immediately, or refrigerate in a sealed container for up to 1 week.

Date and Lemon Slices

SNACK

 

Ingredients

  • Grated zest and juice of 4 lemons
  • 90ml apple juice
  • 225g dried dates, chopped
  • 5 tbsp Groovy Food Agave Nectar Amber and Mild
  • 150ml rapeseed oil
  • 150g rolled oats
  • 175g self-raising wholemeal flour
  • 30ml sesame seeds
  • 30ml sunflower seeds
  • ½ tsp bicarbonate of soda
  • 100g chopped dried dates
  • 50g desiccated coconut
  • 80g ground almonds

Method

  1. Preheat the oven to 180°C, gas mark 4.
  2. Place the lemon juice, zest and chopped dried dates in a pan and bring to the boil. Simmer for 1-2 minutes then take off the heat and cool for 10 minutes.
  3. Add the agave nectar and oil and blend using a hand blender or food processor to form a thick puree.
  4. Place the oats, flour, seeds, soda, dates, coconut and ground almonds in a bowl and mix well. Add the date puree and combine thoroughly.
  5. Press the mixture into a greased shallow rectangular cake tin approximately 25cm by 30cm.
  6. Bake in the oven for 25-30 minutes until golden brown. Leave to cool in the tin then cut into bars.
  7. Store in an airtight container. As it contains a high proportion of fruit it is best kept in the fridge. It is also suitable for freezing.
